In the barrel of bright beer tank, set cooling zone between the gas and liquid

In bright beer tank, gas and liquid phase is a escape stage of carbon dioxide, and it is also the most important stage of bright beer cooling. However, as to most of the bright beer tanks in China, there is no cooling zone between gas and liquid phase. When doing the backpressure on carbon dioxide, the temperature of gas phase is 20℃, and the temperature of liquid phase is 0℃, so the temperature difference between them is 20℃. When the beer is in the process of entering tank, stabilizing and filling, the carbon dioxide will escape continually. The lower the backpressure, the more escape of carbon dioxide, however, these carbon dioxide is crucial to the beer taste. Increase cooling zone in this section will reduce the escape of carbon dioxide under low temperature condition, improve the beer taste and keep the same low temperature from the beginning to the end of the bright beer filling. At the condition of normal temperature, the entrance of back pressure gas will lead to the rising of beer temperature, as a result, the beer can not full fill the bottle and the quality of bottled beer will be affected.

CO2 adding device at the conical bottom of bright beer tank

There are many domestic breweries adopt Venturi tube to add gaseous CO2 after mixing beer and water. The adding gap of Venturi tube is 500um, and it is suitable for yeast dosing. If CO2 is added after the mixing of beer and water, its solubility in beer will be bad. The CO2 will rock to bright beer tank and then escaped with exhausting. We innovatively use 1um cellular titanium rod to do the air inflation in the tank, then it will be large solubility and have a good effect on beer taste. Adding CO2 into the bright beer tank after beer filtration is advised, improve the backpressure of bright beer tank (when working pressure is designed) and try to lower the beer temperature to 0℃. Open a loop interface ( which is the same as beer outlet) at the side face of the conical bottom of bright beer tank and connect CO2 adding device which is special and easy to be cleaned and sterilized, to solve and improve the content of detached CO2, and to improve the beer taste with the least CO2.

Using technology of large flow and low lift beer pump
In domestic breweries, the backpressure of filtration beer in bright beer tank is generally declined from the original 0.20MPa to less than 0.08MPa. The purpose of reducing pressure is to improve the entering pressure difference of bright beer so as to realize the quick filtration, energy-saving and cost-reducing. However, the carbon dioxide added on the mixer of beer and water is easy to be escaped. Under the condition of low pressure, the detached carbon dioxide in the bright beer is not easy to be dissolved. Especially in the process of entering to the tank, carbon dioxide is escaped along with air exhaust. As a result, it will directly lead to the loss of carbon dioxide and the bad effect on beer taste. Therefore, by installing beer pump (large flow and low lift) before the flow plate of bright beer tank and maintaining the content of carbon dioxide, our company can improve the filtration speed when backpressure.

The application of such beer pump belongs to the initiate in domestic beer industry. It will solve the escape of detached CO2 in bright beer because of pressure difference, save beer production cost and reduce the effect on beer taste because of the loss of detached CO2. Reduce the temperature of bright beer to -1℃ if it is possible, then the CO2 will further dissolved under low temperature and high pressure, the loss of CO2 will be reduced and the beer taste will be maintained.

Bright beer tank adopts three-section cooling technology
The best cooling jacket of bright beer tank should be divided into three sections, then it can meet the technical requirements in the process of bright beer filtration, storage and filling. On the design of bright beer tank, when determine the location of upper cooling jacket, the junction of upper beer liquid and backpressure gaseous phase should be taken into consideration. The middle cooling jacket of the tank should consider the overall cooling, thermal insulating and cooling. Its cooling zone is the largest and its cooling is centralized. It plays a leading role in dissolving the detached carbon dioxide and guaranteeing the beer taste. Considering that during the process of beer filling, the beer is only left at the cone part, the lower cooling jacket is designed. By opening lower jacket cooling zone, the terminal cooling of beer (from 0~4℃) before filling is realized. After cooling, the carbon dioxide in the bright beer is not easy to be escaped, it will meet the set requirements of carbon dioxide in beer, guarantee the beer taste and good foam retention and keep the beer quality.
